Content

Introduction to macro- and micronutrients, including definitions, classifications, chemical structure, physical and chemical characteristics and physiological function. Digestion, absorption, transport and storage and factors influencing these processes. Interaction with other nutrients and dietary factors. The biochemical role of micronutrients and their importance in relation to both oxidation and antioxidation. Storage, mobilization and metabolism of macronutrients. Regulation of the mobilization of macronutrients in the body at rest and during work/physical activity. Mechanisms to sustain the fluid, energy and macronutrient balance. Examples from relevant and new research will be used including diet in the context of sustainability.

Learning Outcome

Knowledge:

  • Describe in detail digestion and absorption of nutrients and factors of importance.
  • Describe in detail metabolism and regulation of nutrients in normal physiological functions.
  • Describe in detail mechanisms to sustain fluid, energy, and macronutrient balance.
  • Characterize the function of nutrients in physiological functions and in the context of different dietary patterns.

Skills:

  • Explain in detail digestion, absorption, and transport of micro- and macronutrients.
  • Differentiate storage, mobilization, and metabolism of micro- and macronutrients.
  • Analyze factors influencing these processes.
  • Compare physiological effects of different interrelated nutrients and dietary patterns.
  • Explain in detail the regulation of the mobilization of the macronutrients in the body at rest and during work/physical activity.
  • Reflect independently on a range of physiological consequences of nutrition deficiency/overload (eg obesity).
  • Discuss and reflect on the absorption and metabolism of the nutrients and their importance for the normal functions of the human organism.
  • Use scientific language to discuss and explain problems in written English.

Competences:

  • Independently solve public nutrition problems related to health recommendations and physiological functions, including a sustainable dietary pattern.
  • Systematic understanding of knowledge in nutrition metabolism.
  • Conceptual understanding that enables the student to evaluate current research critically.
  • Critical awareness of current problems and new insights in nutrition.
  • Work independently with scientific literature within the field.

Course literature will be announced at study start on the course’s Absalon page.
